Hey MarcieLynn I hit your link on a post and read some of the recipes you had. This morning I had the French Toast pancakes and it was really Good! I am SO SICK OF EGGS and I wasn’t a huge fan of the mock Danish.

I was very skeptical when I was mixing it. I added the egg last as to soften the cream cheese while blending the cinnamon, splenda and vanilla. It was pretty lumpy at first, but I kept mixing and it smoothed out except for some small lumps. I think making them small is key also. Honestly if anyone else tries these which you should, make them silver dollar size they are easier to flip, because they stay a little gooey in the middle. Also shake the pan a little to make the batter spread thin.

Finished, they smell so great! It was like having dessert for breakfast. I put butter and a little splenda on top and used a small amount of sugar free syrup. It tastes a lot like French toast.

They were easy to make, easy to cook and very good! I want to try the Navy Bean & Bacon Soup next! Thanks for Sharing.

MarcieLynn’s French Toast Pancakes

1 egg
4oz cream cheese (very soft)
2 packets Splenda
1 t vanilla
1 t cinnamon

Alright now I need to try these..Can someone please tell me the net carbs per serving? Hubby and I really would like to have some pancakes and the versions we have tried are just horrible..please advise.

If you want an out of this world pancake recipe too, watch for Sharron Long's new cookbook coming out in February (I think ) I'm not sure what the title will be, but it is themed "Quick and Easy" and watch for Bubby's Buttermilk Flapjacks. OUT OF THIS WORLD!!!!!. I can't give you the recipe now without her permission, but you will be able to get it in her new book. I'm sure Andrea will write a blurb about it and I think it will be available at Amazon.com. So watch the boards for when it is finally released. I have had the happy privilege of being one of her taste testers.

If anyone wants it, I'm willing to share it by email because, to be very honest, I don't know the publication date of the book that I'm working on right now. My due date to the publisher is Feb. 1, then they get to work their wonders with it for a while
