what is kefir??

"Ongoing Weight Loss" at Low Carb Diet Support: "all the talk about yogart.. but what is kefir.. I have never heard of it...."

Ahhh! Kefir!

It is a cultured milk product, older than yogurt, with many more beneficial single celled creatures in it. Plus it it delicious!

Often you can find commercial kefir at a health food store. Helios is a brand that comes to mind. If you like it, then, there are plenty of us with "grains" (no, they're not really any kind of grain product) to share.

It is basically fermented milk. Furthermore, the cultures in it are supposed to be helpful with candida (sp?).

I have not tried it myself, but want to. For those of you who know more, where should I look for it, at a health food store? Also is there a special sub type that us low carbers should insist upon?

Try to get whole milk if you can. But, 2%, if it's all you can get, will give you some idea.

Anyway, if I buy it at a store, why would I need to add an extra grain?

No. The "grains" are really just a "home" that the organisms live in and on, which they "build" themselves. You don't need to add it to already made kefir and you can't induce them to "build" it by using commerical kefir as a "starter."
