This stuff is so amazingly wonderful!

I had never had it before but with Barb K going on about it, I figured I would have to try it. It was a bit hard to peel with the veggie peeler, but I used a paring knife and it was fine. It looks like an asian pear and tastes like a cross between a pear and a potato. It has 6 carbs - 3 fiber 3 Net carbs per 1/2 cup and is so wonderful in salads.
Ok I am done going on and on about jicama. (pronounced with an H)

It's more like a potato and an apple to me. It IS good. Like you said Barb said it so many times that I tried it when I saw it on the salad bar at Sweet Tomatoes. Pretty darn tasty. GREAT snack. Kinda pricey though 1.79 a lb! The ONLY one they had in the grocery store the other day was 2 lbs!! THE ONLY ONE!

I went to a small fruit and veggie market around here and they didn't carry them. It's to cold to go anywhere else right now but i will keep my eyes open for them.

Started 3/20/03 thru 9/2003
Restarted 1/2/04, this time i will finish what i started.

I love those things! I like to cut them into stix and take in my lunch.

I was introduced to them at about age 10 (which trust me, was a while ago) by a naturalist who came to talk to our Girl Scout troup. It was a day-long walk/talk in the woods. He sat down to eat his brown-bag lunch with us and pulled out this amazing brown roundish THING and proceeded to peel it, slice it thinly, squeeze on a little lime juice, then sprinkle it with chili powder! Of course we all had to try it. GOOOOOOD!

Luckily for me living in the "Salad Bowl of the World" I can get them year-round for about .49 a pound or so, give or take, and in sizes varying from a baseball to some the size of one of those mondo pummeloes.

I quarter mine, then use a paring knife to peel off the woody brown skin. Then slice or cut into sticks to eat. Slices are great for scooping up low-carb dips too!

I have fried it. My DH and I love this fried like hash browns. I peel it and cut it into chunks and use my salad shooter and shred it we put Atkins low carb ketchup on it and love it. It's a must every weekend at least one day.

Yuuuuuum. Such great suggestions! And I love hearing about how everyone first discovered this treasure. Awesome! My mouth is watering, just thinking of jicima. And I'm THRILLED to know of a lower-carb alternative to water chestnuts. I'd NEVER have thought of that, but it's perfect!!!

i know i seen a recipe somewhere
i even posted it way back when befor all the post was lost over a year ago anyways it was for a jicama carrot cake
i was to chicken to try it lol
i there is this other recipe to use it in place of fried apples
