super delicious cheese crackers

I have read several recipes for cheese crackers but not this one so to those of you that need to increase drinking water and you enjoy having a snack in the AM, or PM or any oher times here is my solution from the Hispanic cheese section of any supermarkets.
Buy :"Queso De Freir" a semi soft cheese for frying. THIS CHEESE WILL NOT MEALT, i repeat this cheese will not mealt. The brand I use is TROPICAL,[very popular in the NY area] I slice the entire cheese block and bake it at 400 in a convection oven for about 13 minutes. the cheese crockers come out golden brown, and as they cool they become crispy. One draw back: the crispy cheese is so good that my husband enjoys it and my guests think it is marvelous. the cheese is packaged like a mozzarella and generally is in the same location to the left or to the right.
I have experimented in making the slices small, thin, large etc. but they must be even otherwise some will burn. I use a Silpat on top of a baking sheet. the cheese is mild [like mozzarella] but saltier so I can drink a lot of water while I munch. some time I use the cheese crakers as my proteine with a big salad for lunch.

Hi Jen
In my enthusiasm for the recipe I forgot to give the nutritional values for:
Serving 1oz.
total fat: 6g, chol 15mg, sodium 210mg, fiber0,
sugars less than 1g, protein 6g, Tatal Carb. less than 1g.
Now this is on the "Tropical" product I have currently in the house which I bought at Pathmark. I have gone to a Hispanic supermarket and the variety of cheeses and prices was increadible. If any of these markets are available in your area it is definately worth a trip if you like the cheese crackers. Just remember to buy the Cheese for frying.

Many many bad months ago, thas cheese was my favorite, but i ate with with mashed plantains with butter and garlic (we call it mangu), i can honestly say this cheese is amazing, i just feel weird eating it any other way, so i haven't had it in a long time.

Started 3/20/03 thru 9/2003
Restarted 1/2/04, this time i will finish what i started.

Oh, yes yes I also cube it in my version of a fabulous soup: Chicken broth, a little salsa a chopped red pepper,and lots of shredded coooked chicken,try it and enjoy!

Thanks for jogging my memory, Rainbow!

About a year and a half ago, when we lived near a Sam's I would buy that cheese there. Check the cheese section at Sam's or Costco if you shop there. We really liked that cheese!

Now, I buy a cheese called "haloumi" - it is a Mediterranian cheese that is very similar to the queso de freir and you can "fry" it in a little butter in a non-stick pan. That is how I used to fix the queso instead of having to bake it. Also, the haloumi is traditionally served with a squeeze of lime or lemon juice over it. Delish!

You may have given me my answer to a post I made a few days back, about low carb crackers I can eat my tunafish with.

This may just be the answer, and if they do have it at Costco, that will be great!

I see that you live in my neck of the woods, isn't the weather frightfull? I don't know about Costco but any Shoprite, Pathmark, or A & P will have it.
enjoy the "crackers" I'm up to make onother batch.

Oh Yeah, some winter so far! and more snow on the way next week I hear, they said Sunday right to Tuesday! that could be alot of snow!

I never heard of Guttenburg? where in NJ is that? I live in the Northern tip of NJ, right by the NY boarder.

I will look for this cheese, I am very interested in trying these home made crackers.

Hi TBrady,
Right across the river from Manhattan above the ferry, around North Bergen, I came to Bergenfield to buy my beads.
Just watch the cheese so it doesn't burn.
Try to stay warm, the wind is so fearce here on the River that my little yorky Lucy doesn't want to go out. I enticy her with a cheese cracker.
