I just got the new "Slow Cooker Recipes" book by Better Homes and Gardens out of the library and was shocked by the high carb counts. Does anyone know if the carb counts listed in the upper corner of the page is usable carbs?

Opps! I should have written the new "Low-Carb Slow Cooker Recipes" cookbook. Therefore it is suppose to be a low-carb cookbook! Many of the carb counts per serving are in the 20s and 30s. Some are even in the 40s and 50s.

40 to 50 grams??? Another case of a big business trying to jump on the low carb bandwagon, and not being able to get off the ground.

I also bought the book... and quite an eye opener... I chose the Chicken Cacciatori. From the book - 14(17c-3f)net carbs.
I modified it to not include carrots, onions, broth, wine, sugar, tapioca or tomato paste. I included a can of stewed tomatoes to replace it all... It tasted wonderful...

Jen, That is per serving!

Kay, Like you, I had assumed I could subtract the fiber from the carbs but look at the recipe on page 236. The carb count is 1g and the fiber count is 5g. That made me think that the carb count was already calculated to be net usable carbs. I've searched the book and I cannot find an explanation of the carb counts vs usable carbs. Maybe page 236 is a typo. One can only hope.

I did find it odd that they unnecessarily use flour and potatoes in these recipes. As you said, I keep rewriting the recipes - take out potatoes, use guar gum in place of flour. Then you have to recalculate the carb count. Sigh.

Yeah, I've seen a lot of these little cookbooks out there. Some of them really don't know what they are doing, just trying to sell books.

I found a recipe on MSN that looked promising; a low-carb breakfast strata. I checked it out; one of the ingredients was frozen hash brown potatoes. Now, really. I think it's the height of irresponsibility to tout something as low-carb, when you don't even understand what that is.

Just another case of buyer, beware.

Oh, and Kay, watch out for canned stewed tomatoes. A lot of brands have sugar or corn syrup in them.

Yes, I have Sharon's cookbook and love it. I find myself using Sharon's and Dana Carpender's cookbooks most often.
