Thread: Oreo cookies and bread crumbs

    I have two questions.

    One - Lately, I have been craving Oreo cookies. Can anyone think of an alternative that is similar?

    Two - Sunday, I made chicken parmesan. Instead of Progresso bread crumbs I used almond flour. It did not taste as good. I mixed the almond flour with parmesan cheese, garlic, oregano, parsley, and basil. I have made chicken parmesan for twenty years. It is probably considered my signature dish. Is there something besides almond flour that I can use to coat the chicken? Preferably something that browns nice.

    I'd appreciate any help.

    Joanna, the only thing I could think of that might stave off your Oreo cravings is the 3 minute cake posted herein - check under the Recipes section for 3 minute cake, and in the Cooking forum for "Mock Danish, You've Met Your Match!" I really like it. You could "ice" it with cream cheese mixed with the sweetener of your choice to get that cream filling fix....

    As for breading, I use a combo of about 2 parts crushed pork rinds to one part each flax meal, almond flour, and vital wheat gluten flour OR bake mix, whichever is most handy at the moment. The almond flour by itself is too "sweet" to my taste for using on meats.

    Alternatively, you could try the new Orowheat low carb breads which come in at 6 carbs per slice, but are REALLY bread-like in texture and taste. Toasted and run through a food processor or blender, they'd make nice, albeit carbier than the first alternative, crumbs for breading.

    You can also try dipping the chicken in egg, and 'breading' it with the Parmesean cheese that comes in the green cans. Turns out yummy.
