I'm on my fourth week and have to admit that even though I've had great ideas for my 2-eggwhite omelets, I'm getting tired of eggs. Is having eggs every morning essential to OWL? I want to keep up my protein and energy and my weight loss. I welcome any suggestions. Hubby eats cottage cheese every morning. I need variety now.

Mock Danish (hey Maggie - I got it!)

The mock danish is a popular choice and is easy to make ahead and just reheat in the microwave. Do you not like the egg yolks - is that why the egg white omelets?

You can find good breakfast ideas over in the recipe section. My hubby likes the flax cereal recipes. Anything lowcarb you like is fine for breakfast - I had a ground beef and pork patty for breakfast a couple of days ago - that was good.

In my humble opinion, eggs are not essential, at all. I never eat eggs because I simply don't like them.

As for breakfast foods, they don't hafta be typical "breakfast foods". Breakfast, to me, equates any foods; i.e.: anything left over from dinner the night before, anything I would eat for lunch or dinner, et cetera. I mean, breakfast is named breakfast because you're simply breaking your fast from dinner the night before 'til the next morning.

Eat anything low carb that you want for breakfast. There are no set rules.

This morning I had a bit more time for breakfast, so I made cauliflower hash browns with left over steamed cauliflower from last night's dinner. I had them with some bacon. GREAT breakfast!!

I think I'm going to try making mock potato pancakes with mashed cauliflower. Has anyone tried already? If you have a recipe I don't want to redo the work.

You might want to try these Breakfast Bites... they're still made with eggs, but mostly sausage and cheese. They can be made ahead and are great with taco sauce, sour cream, salsa, whatever!

And here's a recipe for faux french toast (but I'd wait till after induction to add the syrup). Top with some butter, splenda and cinnamon, or maybe some homemade whipped cream?

Faux French Toast

3/4 c. pork rind flour (just pork rinds crushed to a powder)
2 eggs
1/4 c. heavy cream
3 packets Splenda
½ t. cinnamon
½ t. vanilla

Beat eggs well, mix in cream, splenda, cinnamon and vanilla and mix again. Add pork rind flour and let mixture sit for 5 minutes. Cook on a greased frying pan like pancakes until brown on both sides. Serve with your favorite low-carb syrup.

Try rollups - I generally like them with smoked salmon or prosciutto, but you could use roast beef, turkey, or whatever you like.

Just roll the sliced meat around a slice of cream cheese. They're delicous and filling and portable too, in case you have to take breakfast on the run.

I often make up 4 of them and put them in a sandwich bag to take to work for lunch.

If you're feeling particularly creative, you can mix the cream cheese first with some minced green onion and/or capers or other herbs, or chopped olives - whatever you like - and then wrap the meat.

I like the leftover deepdish pizza for breakfast too! I think the recipe is under the Recipes section. The "crust" is actually an egg base, but it's very tasty.

Now that I'm out of induction, I also love the O'SoLo rollz, banana walnut being my fave, split, toasted, and with a shmear of cream cheese or just butter. The whole roll is 3 carbs. I add a slice of bacon on the side and it keeps me going all morning!

A Ramekin is a small, deepish kind of bowl with straight sides. Think mini souffle dish. I have four of them made by pyrex. They can be microwaved, put in the oven, chilled, etc. I also have some really shallow ones that I saved from my Creme Brulee days (from Trader Joe's)

I usually have Flaxomeal cereal with some added ground almonds or mock danish. I have bacon and eggs MAYBE once a month.

It doesn't have to be a ramekin, Cherub!

Any microwave safe container will do: Glass, ceramic, corelle, pyrex, etc. Just don't use plastic, since it shouldn't be used for microwaving. Might leach out some chemicals or something.

The thing about a ramekin is that you get the same depth all across, whereas with a bowl, the bottom is rounded, so your mock danish is not all one thickness.

I kind of like mine more done on the edges and just set, but still a little creamy in the middle, so bowls actually help me get the result I want even easier.

Ya know, eggs really DON'T contribute to exagerated choleterol readings. They have SUCH a bad rap. SEE my "lecture" on Margarine vs Butter in the "margarine" thread. Here I think the same goes for eggs.

Eggs are our friend!

I've eaten two to three eggs about 80% of the mornings since Labor Day 2003 and when I recently had a physical my cholesterol was 171. Dr. Atkins covered the subject of eggs not raising cholesterol very well in his book and Barb K. is right on with her Butter vs Margarine article, and the parallel to eggs. The "butter and eggs are bad for you" thing was perpetrated on us by the same "experts" (former spurt) who supplied us with tons of other nutritional misinformation.

I just happen to like eggs for breakfast or dinner. Actually I find that if I eat my eggs and bacon or sausage in the morning my hunger is under control for the rest of the day. No scientific proof here, just a YMMV thing. It's just a "craving controller" for me.

And Barb, thanks for a great "lecture" on Butter vs Margarine...cause Butter's been gettin' a bad rap and I'm glad you took its side! Butter, eggs and cream are our LC Friends!

There's been some great Breakfast suggestions here. Thanks all....
