Do any of you have these as part of your woe? The net carb is around 6 for 6. I had a very bad salt day so i wanted something light for dinner and had 10 with 1/2 cup of cottage cheese. It was very filling, i sprayed some butter on them and they were really good.

DH and I add them to our WOE. They are quite tasty with butter, and we are slowly but surely converting the kids to eating them! Takes a little encouragement, but they are slowly eating more of these veggies to their diet. My stepson was cheeking them, so now I call him chipmunk. He said he was doing this, cuz it "tasted good". Kids will be kids!

They tasted good to me too...lol, they have this nutty flavor that's unlike any other veggie.

Have you ever tried oven-roasting them? I cut off the stem end and halve them, then rinse well and nuke in a covered dish for about 5 minutes, til BARELY tender - drain well, add some olive oil and garlic salt and shake them around well to coat - place on a rimmed oiled baking sheet and roast at 425* til lightly browned on their little bottoms, flip over and shake a bit and roast til medium brown. They are so sweet and good - even DH, who HATES B. sprouts, will eat them like popcorn if I cook them this way!

I grew up on the coast here in Cali, brussel sprouts are abundant. I eat them with garlic and butter YUM. The fiber makes up for the carbs. Just can't eat a whole pot, I stick to about 5-6. I can eat way more but dont. My son LOVES them, I'm lucky. They're also really good if you cut the bottoms off, then cut them in half, steam them, then toss around a frying pan w/ garlic and butter. YUM YUM brussel sprouts.
