I make chili with black soy beans and often make burritos with the left overs.
I've made a couple of attempts at refried beans. I mash them only very slightly and sauté them more than fry them, with onions, tomato, cilantro, etc. If you fry them too long they just turn to a gross mush.

thanks BL.. i have looked for black soy beans.. but i havent found any in this hick town... and i guess i COULD order on line..*sigh*....

If you have a health food store anywhere near your hick town, you might find canned black soy beans.

That's the only place I can get them in MY hick town!

Kim,

As a fellow hick town resident, I can tell you that your local HFS probably carries Eden brand canned beans; if they don't have the black soy beans, ask them to order them for you.

I make refried beans much like Brightlady does, and I use the black soy beans in chili, salsa and soup. They are really good, high in fiber, and low in carbs.

Didn't someone post in another thread that they could order them for less than getting them from the HFS?

Here is the Eden site Black Soy Beans

Where we live I can buy dried yellow soy beans but not the black ones - they work well in lots of recipes. Also, the small red beans have almost as few carbs as the black soy beans and we really like using them. I have used them to make refried beans and they were delicious!

I really like canned soy beans. I made something sorta like Baked beans with them and added bacon, LC BBQ sauce, splenda, onion, worcestershire sauce, ThickNthin, a smidge of hot sauce. They were pretty darn good!!!!!

If you can only find them online, order a bunch, they will last since they are canned.
