| My kids and hubby decided that they wanted me to make my homemade spaghetti sauce tonight. I made it and it smelled soooo good (not trying to pat myself on the back, but ummmm), and I had to sit there and watch them eat up and enjoy it. I was ok, had a baby spinach salad with steak, and side of cauliflower and cheese. But still the one thing I miss most is my homemade lasagna, oooh my. I can get rid of my cravings as well as anyone else, but I am afraid that that one will never go away. ![]() Kristie 168/156/115 remember: weight loss slow and steady wins the race |

| Kristie, I am Italian and I love cooking. Have you tried spaghetti squash? I am having a small dinner party Sunday, and I am making chicken parmesan. I still cook sauce and eat it with sausage, meatballs, eggplant lasagna with layers of eggplant instead, zucchini with tomato sauce and mozzarella. Don't give up Italian food...just be creative! | Lasagana happens to be my signature dish. Heck, I've been making it for 30 years. So I feel your pain. When I make my sauce I use a LOT More ground beef and less tomatoes than I used to. Then I've used everything from zucchini to cabbage as "noodles". Total carb count isn't really all that much when you make it that way. So maybe I have to go a little light on carbs at breakfast and lunch (not a whole lot) to fit this in. It's definitely worth it. Rob 310/230/180 Me, a skeptic? I trust you have proof. |

| I've made Zucchini lasagna and EVERYONE loves it. I slice the zucchini lengthwise to make "noodles", layer as usual and cover and bake it an hour. You can blanch the "noodles" to soften them too. You don't have to give up lasagna. I also use cabbage, cut "noodle style" and pour sauces on. Very delicious. Just steam the cabbage until it's really limp. | I'm another who uses cabbage, zucchini, and eggplant in place of pasta for all my old recipes. I will never go back to eating the pasta versions. I like the new versions much better. Joyce(lc since July,2002) 230/175/135 |

| I feel your pain. My Grandpa was full Italian and taught me to make alot of traditional dishes. It has been toughest getting away from all those dishes. I have tried alternatives though tasty and a regular part of my menu it doesn't replace my family fave of clams linguine!!! Beckie 257/209/150 |

| Spaghetti was my favorite meal before this woe. I loved my homemade sauce with a big plate of noodles. I still make the sauce and make the noodles for DD and DH but I have the sauce over an omelette. I make a 3 egg omelette sprinkle cheese of your preference over it, throw it under the broiler until cheese melts then pour sauce over the completed omelette. This is so good. I actually made it for DH one night because he would comment on how good it looked everytime I had it. It has now become a staple meal in our house. Carb counts aren't too bad although certainly not an induction level meal. Started Atkins 10/27/03 182/147/140 |

| Last night I made regular lasagna for my dh and eggplant lasagna for me, yipee. Mine was by far the superior product. I dredged the eggplant in egg & almond flour and sauted it first. Course I got to add green pepper and mushrooms to my version since dh won't touch anything with eggplant, gr. pepper, or mushrooms in it. I had it for dinner, breakfast, and lunch. Need I say more?
