I'll be going to a pot luck on Saturday and am trying to think of a dish I can take with me that I can eat, and others will like. It should probably be something I can fill up on, in case there's nothing else there I can eat. Any suggestions?

I'm also thinking I should take an LC cheesecake or something so I won't be tempted by dessert...and to show off how good LC can be, of course.

i think the twice baked potatoe recipe with cauliflower is great. my family loves it (aka my mom and dad) and they are totally un-lc. They dont care that its lc because it tastes so good. just look in the casserole section (i think) in the recipes on this website. its great if you do half cream cheese and half sour cream instead of all sour cream.

A low carb meat loaf or some black bean chili comes to mind. Also some kind of goulash or stew would be easy and filling. The cheesecake idea is a good one. If there was nothing else you could eat that cheesecake would fill you by itself.

How about a big beautiful platter of meat and cheese wraps in lettuce leaves with some full fat dipping dressings like ranch or caesar? Then place some deviled eggs in the center, and some sf pickles and some olives around for decoration....yummmm

Like rob = stew, chili (make with grn turkey), or ground beef. When I make stew I put lots of veggies in it and it almost becomes a full meal. Salad is always a good alternative, Taco fixin's sans chips - lettuce, tomato, cheese, hot sauce, seasoned grn. beef or turkey, sour cream.... The list is really endless. Chicken soup, chicken curry....

I'm planning to make the cheesecake today. I have a few recipes.

Can anyone tell me what cheesecake recipe they use that works the best? One they've made before with good results. Thanks. And what about toppings?

Thank you. That looks good. I was wanting to make a big cheesecake. Is the Splenda pourable or the packets? I know it makes a difference. I'm planning to make this with a nut crust, do you think I should prebake the crust for a few minutes?

Is this a New York style cheesecake?

Fortunately, I have a lot of experience with cheesecakes, just not much with the lc variety.

The cheesecake was very popular, especially since there were some diabetics at the dinner. The taste was good but I'd like to work on the texture, as it wasn't smooth enough. I know this has a lot to do with the chemical properties of sugar, but maybe some sour cream would help. I served it with fresh raspberry coulis.

I was proud of myself for sticking to the diet at dinner, because there wasn't a lot I could eat. But I was good.

good for you! those situations can be difficult, you should be proud of yourself for staying strong.
although i could probably post this in the cooking forum, i wanted to share another great treat to bring to such events.
i have made these twice in the past week, and even non LCers LOVE them! SO EASY to make!
just take dried beef (made by hormel) and roll up a "slice" of cream cheese in each piece of meat. then stick a toothpick (the fancy kind) through the roll. they are so delicious ... but veeery salty (the meat probably has nitrates and nitrites, too) ... so eat in moderation!
