I recently purchased Atkins banana nut muffin mix. I brought it home all excited. I baked it right away. It smelled pretty good cooking, but when I tasted it it was just plain GROSS.

I also bought Attkins chocolate muffin mix, but am unsure if I even want to take the trouble to make it.

Does anyone know of a better way to make muffins and breads?

I made some of the chocolate muffins the other morning and I had to remind the wife a dozen times they were like 6 net carbs. They were really good. Careful with them!

I think I have a box of the banana muffin mix but haven't tried it yet. Would it be better if more banana flavoring was added to it? Or what was the problem with it?

In my experience it's always better to beef up LC mixes a little. I had to do that with the MiniCarb ones that I bought. Add a little canned pumpkin or more oil than they say to to increase moisture (even for chocolate things), add a little more sweetener, add a dash of salt. You have to experiment, but go with your instincts.

In the future though, it's just easier (and cheaper!) to make your own.

Actually I had made the muffins a couple of times and thought they were prerry good!

Have you tried other low carb mixes? I think you will find others to be more disappointing.

I have been staying away from these mixes and stuff, trying to eat just real food.

Mmmmmm.....banana nut bread. When I bake it, the whole house smells yummy.

I've never tried the low carb mixes. Gonna hafta scope 'em out.

On a side note...one time I bought a banana nut bread candle from the Yankee Candle Shop and I lit it when I got home. It smelled so good, it had me craving the real thing.

I'm strange....but that is understood around here.

I really like the poppy seed lemon muffins. I bake them in the small muffin top pan. It makes twice as manny so the carb count is about 1 net carb per muffin.
