Pepperoni is good. You could also cut up some celery. Cheese cubes are also a good one.

My list might include these, and I would put the perishables in a cooler with an ice pack in the back seat for handy reaching:

vienna sausages
pepperoni
cucumbers
green peppers
radishes
raw broccoli
raw cauliflower
celery
Ranch dressing for dipping veggies
sliced meats from the deli such as turkey, chicken, roast beef
real aged cheese slices for wrapping up the sliced meats
sour cream for dipping veggies
cream cheese to spread on celery
pork rinds

Just to name a few things...

Nuts!

I find a handful of almonds very tasty and filling. Just need to keep it to a handfull at a time though.

I prefer the roasted and LIGHTLY salted ones.

Beef jerky in case of emergency - check the carb count as they vary GREATLY! I don't eat them often, but they can be a lifesaver when there's nothing else in the car.

i'm still confused about "real aged cheese." is this the kind i buy at the deli? sliced swiss? or do i need to go to the specialty section of my HFS?

How about trying some of the Scooter Snacks listed at the top of this page. I was reading nutritional info yesterday. Appears as if the company has taken time to take out some of the less desirable ingredient in regular jerky.

Yeah, when I say "real, aged cheese" I'm trying to make a distinction between the pasturized processed kind (like Kraft American Singles, Velveeta, Cheese Whiz) and the kind you buy from the deli. Cheese in blocks is aged.

The individually wrapped singles are pasturized and processed.
