Hi all,
I am now just about 2 months into this WOL. It has really made a difference in everything about me. 25 pounds gone!
Here is my problem. I work VERY hard at increasing my carbs. I just cant seem to get very far past 30 carbs. I eat 1 serving of nuts a day and strawberries and cream at night. THis is how I finally made it past 25. I eat tons of veggies -lots of spinach and cucumbers green beans (yum the replacement for chips !)and tomatoes but when the day is done I am still just around 30. I know that many have talked about the food ladder. Any veggie suggestions? I dont want to have my body get too used to the 30 carbs.
Also I was wondering about other people's CCL. I mean do many of us go way past 30 or 40?

I know the feeling. I have trouble getting past 25-30 g a day too.

Would also like to hear how many people (if any) are above 40 g a day.

Started Atkins on 9/20/03
235-->185; 150 goal

I am at 40 and really struggling to get there some days. . .I have added an extra 1/3 to 1/2 cup of fruit and even more veggies to my diet. I feel really good and the weight is falling off of me like rocks off a mountain. Everyone I work with is noticing. I have also noticed that every time I up my carbs I have lost several pounds. I keep thinking I am getting close to CCLL but not so far. I have slowed a time or two, once even gained 9.5 lbs (water retention) but consistently losing to the point I am really happy with the way I look for only 9 weeks on the diet/WOE but I do have to keep adding things. . .nuts, fruits, even soem LC crackers to go with my cheese and turkey or ham snacks! That is how (along with my veggies--tons of them) I am managing to keep the carb level going up.

Have you tried using some of the higher carb veggies, like tomatoes, onions, beets, winter squashes, turnips, etc? I find when I add one of these to a meal I have less trouble keeping up the carbs. I love a meal of LC spaghetti using hamburger or sausage with pasta sauce (LC of course) and spaghetti squash, or a turkey meal with pumpkin pie or sweetened/spiced winter squash, or shrimp in butter and garlic with onions and spinach. I also love a stir fry with meat of choice,onions, peppers, cabbage and snow peas. When you use the slightly higher carb veggies it tends to add up fast.
Just some ideas hoping to help.

I am kind of picky about my veggies--love spaghetti squash but not tomatos, not really onions or pumpkin, not spinach, not celery, I am trying and tasting lots of new veggies, still not finding those I like--but finding a lot of them I really don't care for!!! Peas and corn are the ones I know I like and not quite ready for those yet I don't think! they still cause cravings for toher starches. . .I have added carrots a time or two without incident and I lvoe raw carrots with dip along with my cauliflower and broccoli. I save them for a treat though--not a staple in the diet--though we are getting to that point where I am going to ahve to add them back as a regular thing. Though I may be getting close to CCLL as weight is sloweing considerably!

Yep, higher carb veggies could be in order here. I use rutabega once in awhile. It mashes up great like potatoes and is almost as high as potatoes. So I use them sparingly. I also now allow myself some raw carrots once in awhile, as well as tomatoes and onions. That gets the count up a little higher. I have also found some really good LC bread and am indulging in that more often. My stall has broken!!!!

when I need carbs, I usually just eat a handful of nuts, and a double order of brussel sprouts ! YUM!

Now that spring is here, we should be getting a whole lot of fruit choices too.

Winter squash is always good, or even a stuffed bell pepper??

Isn't this great? we're actually trying to find carbs now? heh

Yup--my tastes are changing slowly slowly, but I still don't care for most veggies. Not a good way to be eating when you don't really like veggies, but a good salad always fills me up--and I love lettuce. Cabbage is always good too--add a little mayo and a few other seasonings and have some LC cold slaw! mmmmmm

Amy, you're probably at a point where you can start adding some berries.

Brightlady.
I already thought of adding berries. I eat either strawberries or blueberries nightly (with cream YUMMM ).
I guess my problem is that I am soooooo full all the time from what I am eating that I just dont want anymore.I NEVER snack at all except for the berries at night. I am going to try some spaghetti squash tonight. I have actually reached about 32 carbs! It feels like a major breakthrough. I have to go read to see what other veggies to add.

Are you really sure you want to add more carbs? I know what Atkins and others advise, but I've found that even after all these years, if I want to maintain a BMI of 21, I simply cannot increase beyond 20-30 carbs per day. This after two decades of daily ballet based training and starting with 50% carbs twenty years ago and seeing that the older I get, the fewer carbs I can tolerate. No doubt, if I would be willing to tolerate a higher BMI, I could eat more, but I like a BMI of 21.

I want to increase my carbs to just below where I no longer lose. I dont want my body to be used to only having 30 carbs if I can eat 40 or 50. I have heard others here say that because they went so long on only a few carbs that they cant eat many at all. I do not want to fall into that category.

I have tried adding things like spaghetti squash and berries but am finding that I can only eat small amounts before I am full. I suppose that this is a good thing but this is what is keeping me at 30ish carbs a day. I am going to try to add some snacks earlier in the day. But that is tough to accomplish unless I eat in front of my students..esp. since there is a BIG sign on the computer lab door stating no food or drink!
Although they never questioned my water bottles!
