I am so confused right now

FOr some reason, i seem to have gained back the weight i lost. all of it, it seems. Even though the inches havent changed, i do feel the difference, i feel as though i have gained it back. The thing is, i have been eating right. im at 30 carbs a day, and i have barely begun to move towards my goal. I dont know what to do. i have posted my meals a number of times and havent ever really had any major issues on my menu.
breakfast: omlette or a recipe by sharron, always under 10 g, coffee with cream
lunch: depends, usually leftovers from the previous night, so some squash (like a cup) and a protein source.
dinner: protein source, a few cups of vegetable.
snack: usually something sweet, but LC, like rasberries, or LC cheesecake or fake fudge.
I am already in process to cut out caffeine and diet soda, i have tried switching to herbal tea and i think it might work.

So what am i doing? it feels right, but its not getting my results.

Have you been drinking enough??? I know that I retain water the less I drink the more I keep. If you aren't losing progress in the inches fluid sounds like the culprit to me. Real weight gain would be in inches as well as pounds. If you have been exercising some of what you gain may be muscle. . .don't know what else to suggest. . . The other thing I see is that you are eating most of your veggies all at once. . ."a few cups of veggies" along with the squash in the afternoon with lunch add a salad or stop with the squash at lunch and have a big chef type salad instead along with some extra protein. The other hting you dind't post was how much meat/protein you eat--8oz, 10 oz, how much?

How tall are you? Your body may be telling you that your goal weight is not realistic or it doesn't like that number as well as your head does. You are also 1/3 of the way to your goal and those last few--10-15lbs usually are harder to budge than the rest. I know it is frustrating, but all too true! Stay the course, add a few more LC veggies and a bit less of the starchier ones and keep tweaking until you figure it out and get on with the losing part you so want to happen.

and when are you having your snack? if it is after dinner, that may be too close to going to bed for something that sweet.
