Hi,

I was shopping for my lunch at the local Safeway and they've added a whole LC section. There on the shelf was Flax-O-Meal, Butter Pecan. Oh boy, howdy...was that ever delicious!!

Can you use this stuff for making Mock-Pancakes?

Never tried Flax-O-Meal, but I do eat Maggie's cereal. It's just like Flax-O-Meal except it does not have the extra flavoring. It's also less expensive overall.

Not sure about using it for pancakes. IMO frying the flax would cause the omega 3s to be converted into free radicals, ie. destroying their health benefit.

We use Maggie's Cereal to make Pancakes and Waffles so I'd guess you could just substitute the Flax O Meal for Maggie's Cereal. Here's my recipe. DH say's it tastes alot like the whole wheat one's we used to make.

Pancakes from Maggie's LC Cereal

1 c. Maggie's cereal
1 tsp. baking powder
1 tsp. cinnamon
Stir these together in a bowl. Then add:
2 eggs
3 Tbsp. S/F syrup (flavor of choice, we use brown sugar)
3 Tbsp. oil
enough water to make them of pancake consistency
Whisk it all together and bake on a non stick skillet or waffle iron that's been sprayed with fat.
This makes the full 4 waffles of the iron. We haven't made them as pancakes yet as DH loves them as waffles topped with butter and s/f pancake syrup.

Just thought about the flavor, oops. If you don't want all or any of the cinnamon flavor just leave it out. It's only for flavor anyway.

I am not sure exactly what Flax-o-meal is.....it is like cereal you eat with milk.

Since I can't have milk...how do you eat it?

flax-o-meal is made by mixing it w/ boiling water (like instant oatmeal). but i add half & half to make it creamy, or sometimes a little butter. or some davinci vanilla or splenda.

mmmmm! i'm waiting on a mail order right now - can't wait!! :cook:

Flax-o-meal (like my cereal - which is just a cheaper more versatile knock-off) is combination of soy protein isolate, flax meal and coarse wheat bran. It is like an instant hot cereal. You make it by adding boiling water to the bowl while stirring. I like to make it not too runny & then drizzle some heavy cream over it, along with whatever "goodies" I've chosen for the day.

Flax-o-meal is available on line and is now starting to be found in many grocery and health food stores. The recipe for the home made version is here: Maggie's Cereal

I love putting CREAM into my flaxomeal cereal. I also add davinci or torani syrups, cinnamon, vanilla, almond extract, and have yet to try orange flavoring. I wonder how it would taste with orange extract and cream, dreamsicly I'll bet. :fork:

The type I bought comes with Pecans in side. ONe 1/2 cup serving has 2 net carbs and 10 grams of fiber. Should call this "Colon-Blow" due to the effect on the bowel.
