| My favorite way to cook zucchini is to slice it (along with some yellow squash and some mushrooms), put in a glass baking dish, drizzle it with olive oil and some seasoning, and put it in the oven for about 30 minutes at 425 degrees. It comes out yummy! Also, you can slice it and saute it in a pan with olive oil. I would definitely leave the skin on as well.

| In my book, nothing compares to grilled zucchini. Cut into chunks (leave skin on -- fiber + phytonutrients), drizzle with olive oil and toss with minced garlic in a grill basket. Grill till tender-crisp. Oh, yum.
