One question I do have though, is my husband and I (who eat low carb as of about 2 months ago)LOVE chicken picatta and we do not know what is best to use as a flour substitute(for dredging after dredged in egg, then fried in pan.) Can you give me some (or A) suggestion?  Would it be the carbilose flour?  If so, do you buy that at your local grocery store? If not, where do you buy it?  Or should we just use parmesan cheese? We also love meatballs, and I could make chicken meatballs but don&#039;t know what to use in place of flour &quot;to hold them together.&quot;  Can you help? Melanie</description>
