Description

A delicious replacement for the other snack mix that even your carb-loving friends and family will be munching up!

Ingredients

  • 6 T Butter
  • 2 T Worcestershire Sauce
  • 3⁄4 t Garlic Powder
  • 1 1⁄2 t seasoned salt
  • 1⁄2 t Onion Powder
  • 2 c mixed nuts
  • 1⁄4 c sunflower seeds
  • 12 lc tortilla chips
  • 1 pk pork rinds
  • 1 pk Spicy Pork Rinds

Instructions

Preheat oven to 350 degrees.

For the chips, I used Carb Sense Pico de Gallo tortilla chips (in pieces), OR other lc tortilla chip of your choice, OR 2 pieces of lc bread, toasted and rubbed with a cut garlic clove.

Melt the butter and mix with the Worcestershire, garlic, seasoned salt an onion powder and mix in a big bowl. Add everything except the pork rinds and mix up until coated. Then add the pork rinds, broken a bit until they are about twice the size of a piece of the loathsome cereal upon which this mix is based. Toss everything like a big salad.

Spread the mix onto a very large, sprayed, baking pan with a rim on it. (Don't use a roasting pan with deep sides, or the stuff will steam. Also, if you don't have a big pan or oven, or if you're making a large quantity, do it in batches. You want the mixture spread out so it browns quickly and doesn't "braise.")

Put the pan in the top third of the oven and cover your counter or table with newspapers. After 5 minutes, stir things up a bit. Then check & stir once or twice more, every couple of minutes until it's starting to get golden. Dump it onto the newspapers and allow to cool COMPLETELY before storing in an airtight container.

Should make 9-10. The exact count will depend on the carb counts of the ingredients you use.

Notes

Warning: This is NOT a low cal snack, for those of you who count them. Also, this is a high sodium snack and water retention is likely. Drink lots of water ( in addition to your Mich ultra - LOL!) to reduce the likelihood of a shocking number on the scale the next day.

Nutritionals are based on a 1 cup serving, assuming 9 cups of mix.
