InstructionsCut the breasts in half. Clean leeks and slice into thin circles. Heat 1 tbs olive oil in a saute pan. Add the leeks and garlic and saute until leeks are wilted. With a mallet or your fist pound the chicken breasts flattened out and as close to an even thickness as you can get. (Wrapping the chicken in plastic wrap loosely helps keep down the mess while you flatten them). Place 2 heaping spoonfulls of the leek mixture into the middle of the chicken breast and roll up. Place in a baking dish seam side down. Drizzle with the remaining olive oil and sprinkle evenly with the italian seasoning and parmesan. Bake in a 375 oven for 40 minutes or until the internal temperature reaches 165 degrees F. NotesFresh parmesan cheese works best. | |||||||||
