Description

Remember broccoli rice casserole? I whipped this up last night and it was excellent and very similar.

Ingredients

  • 2 c Cauliflower
  • 1 c Broccoli
  • 4 oz Cream Cheese
  • 1⁄2 c Sour Cream
  • 1 1⁄2 c sharp cheddar
  • 1⁄2 c montery jack
  • 2 T Parmesan Cheese
  • 1⁄2 c calorie countdown milk
  • 1 1⁄2 T onion flakes
  • 1 ds salt & pepper

Instructions

Use finely chopped cauliflower (to resemble rice) andĀ chopped broccoli as well as finely shredded cheese.

Heat oven to 350 degrees. Line a 9x13 pan with foil and spray with cooking spray.

Combine cauliflower and broccoli in pan and set aside.

In a microwave safe bowl, heat cream cheese till soft; about 1 minute or less. Add sour cream, stirring well. Add cheeses & spices, again stirring well. If mixture won't combine, nuke for another 30 seconds to 1 minute.

Add dairy beverage using the amount needed to make pourable, mixing well. Pour cheese mixture evenly over veggies. Gently incorporate until all veggies are moistened. Bake for 25 minutes.

You could make a crumb topping by toasting, buttering, and tearing 2 slices of low carb bread into pieces and scattering on top, but add the carbs. I used the leftovers in scrambled eggs for breakfast and it was delish!
