DescriptionI found this recipe in another forum, and it's so good that I had to share it with you. If you love split pea soup, you're going to like this soup, and it has absolutely no split peas in it, is very carb friendly, and a great source of veggies.

This is how I made it, using what I had. First of all, I thought I was buying smoked turkey wings, but when I got home found that I had necks, but they flavored the soup nicely, just not a lot of meat on them. Then I put the necks on a plate to cool, put about 1/2 of a head of cauliflower, cut in chunks, into the broth and simmered until they were very tender, between 20 minutes and 1/2 hour. I dumped the canned green beans into the broth just to heat through, then turned off the heat and used my immersion blender to thoroughly puree the soup. I suppose you could use a countertop blender or a food processor just as well. Then I took the meat off the bones of the necks, as much as I could, and put it back into the pot. Tasted and then adjusted seasoning. It needed a bit of salt. We ladled it into our bowls, and began slurping. Oh, boy, it was excellent! You just can't believe how much this tastes like split pea soup. The texture is lighter, but the flavor is there, from the smoked turkey. NotesAs a side note, when I took a picture of a bowl of it, it came right out of the fridge. I didn't bother to heat it up to take the photo, and I ended up tasting it cold, and it is very good cold. This would make a nice summer soup for a hot day when you need something refreshing and light. The picture shows a dollop of sour cream on top, but is not necessary. This would also be good with a bit of heat, perhaps some crushed red pepper flakes, or a bit of diced tomatoes with green chilis. | |||||||||
