It's hard for me to believe it, but it's true: Christmas 2002 is already over! Here in upstate New York, we're in the middle of a huge snowstorm - it looks to Bob and I like we have AT LEAST two feet of snow already, and more is falling still! Our little street is completely quiet in the dark, and the sparkling snow is so far untouched - the tracks from the plows that came earlier have been completely obliterated.
My children have been snoring away in their beds for hours, my hunny is pretending to watch TV down in our family room, and here I am, up in my loft office, thinking about the day that's gone by, and wanting to share some of it with you before the wonder and joy gets lost in shoveling and cleaning and getting back to the daily grind that is sure to start once my eyes open in the morning. (That is, if they ever close! Webmasters - a strange bunch we are!) So here goes, a little bit of my low carb Christmas, 2002...
The Tree
Note the train going around the bottom: very important to the male members of my household! And yes, it's big - about 10 feet!
What does a Christmas tree have to do with low carbing, you ask? Well, each year we go to this amazing tree farm to cut down our tree. This place has become kind of a tradition in our area. Folks come from miles around not only for the trees, but for the horse and carriage ride, the hot dogs and hot cocoa, the little bonfire, and the fun! Some groups actually have what can only be called "tailgate" parties, complete with grills and folding tables and chairs... all in the cold and snow with mittens and hats and big puffy coats! Anyway, the thing is, our family (for some awful reason that I still don't understand) just HAS to climb to the top of the big hill to get a tree - none of the trees closer down will do, you see. And you know what? In years past, that climb was pure torture for me! By the time I got myself up the hill, I was good for nothing but standing and breathing hard! But this year, I stood on "Christmas Mountain" (my kid's name for it) and looked out on the whole scene and laughed! And I had enough breath to do it! That may not seem like a big deal to you, but to me and my family, it was WONDERFUL!
The Food
OK, let's get down to the nitty gritty. Can Christmas really be low carb? It sure can!
We had turkey, fresh green beans made with a little butter, lemon and pine nuts, steamed broccoli, a "spring salad" mix with cherry tomatoes, red pepper and celery, and Bob's amazing creamed onions! Who says low carb can't be delicious and healthy! And yes, we did give the kids cranberry sauce. Hey, it's Christmas after all!!!
Now, you may be thinking that we should have whipped up a few of those really fancy low carb holiday recipes that are out there. I'm all for fancy recipes...as long as I don't have to cook 'em! So, I'm not going to apologize to anyone that I didn't cook a bunch of fancy low carb stuff. We had a great meal, stayed low carb, and had lots of good veggies to boot!
Presenting...Dessert!
Having made the above disclaimer about fancy recipes, you didn't think you'd see something homemade here, right? Good! Because we had...
Pleasantville Cookies! yep. We all love them, and they're high in fiber (which is always a good thing!) and they were the perfect end to our family meal. (And yes, the kids had a few Christmas candies. It was Christmas, after all!!!) I actually did MAKE something, though! My famous Whipped Cream with Splenda (it was rough, but I did it!). And we put a little whipped cream on our plates, and dipped those cookies in and mmmmmmmmmm..... you get the idea!
The Fire
And last but not least, I have to mention the FIRE.
Yeah, there's no fire in the picture. i took this BEFORE Bob lit the fire. But you get the idea...
Because, as I sat in front of our fire after our low carb feast, I couldn't help but remember holidays past, when I felt so bloated and sleepy and guilty by the end of the day! And you know what? Tonight I didn't feel that way at all.
What I felt was alive and excited and blessed - blessed to have found a style of eating that has helped me (as of this writing) to lose 80 pounds - and that's just about the best present anyone could ask for! And I feel blessed to be able to share it with you!
Earlier today I was reading some of the Christmas posts on the bulletin boards here. At first I thought it odd that so many folks were around on Christmas (it wasn't odd for me, of course, just them ) and you know what? Those of us who just couldn't "keep away" decided why: the community here really is a "family" of sorts, and its just natural to want to be with family during the holidays! That's a pretty great feeling, guys. It's an honor to be part of it! Here's wishing you health, happiness and fulfillment in 2003...
