Description

Low Carb Cocunt Flour BreadI was afraid the bread would be dry, because previous experience with coconut flour yielded a very dry product (the OMM, for instance), but this is not the least bit dry, probably due to the large amount of egg and butter. I think that even my dh will like this. It does not taste like coconut.

Ingredients

  • 6 Eggs
  • 1 c Butter
  • 1 t fiberfit
  • 1⁄2 t Salt
  • 3⁄4 c coconut flour
  • 1 t Baking Powder

Instructions

Melt butter and sift flour. Mix well, pour into buttered loaf pan. Bake at 350 degrees for 40 minutes.

Actually, I ended up baking mine for 50 minutes, but I'd check at 40, because my oven seems to take a tad longer to bake.

This is a somewhat eggy-tasting bread, so if you don't care for that kind of taste, this might not be for you.

Notes

This sliced into 15 nice, generous slices. Fresh with butter was good, toasted with butter was even better. It's a dense bread. I think this would make a good french toast, or a pnb & jelly sandwich. This wasn't sweet, so add more sweetner if you'd like a sweeter bread.
